Recept van een heerlijke winterse salade geserveerd op onze Birds of Paradise dinerborden
Winterse salade
Ingrediënten
Voor 4 personen
4 gekookte bieten (in parten gesneden)
1 flinke hand ongebrande walnoten
scheutje ahornsiroop
snufje kaneel
snufje chili vlokken
Zeezout
150 g slamelange
50 g granaatappelpitjes
1 (bloed)sinaasappel (in plakjes zonder vliesjes)
handje gedroogde cranberries
100 g zachte geitenkaas
Verwarm de oven voor op 180 graden. Hussel de walnoten met de ahornsiroop, kaneel, chili en zout. Leg de walnoten op een met bakpapier beklede bakplaat en rooster ze met af en toe husselen 10 minuten (let op dat ze niet aanbranden, want dan worden ze bitter). Haal ze uit de oven en besprenkel met grof zeezout. Tegelijk met de walnoten leg je de bieten in parten gesneden en besprenkeld met olijfolie in een ovenschaal, zodat je deze 15 minuten kan roosteren.
Hussel alle andere ingrediënten door elkaar in een grote slakom.
Meng 6 el olijfolie met 2 el balsamico azijn en zout en peper. Doe de dressing op het laatst over de salade.
