Gesmoorde rode kool
Ingrediënten
Voor 4 personen
1 ui, geschild en fijngehakt
2 appels, geschild en in blokjes gesneden
1 rode kool, buitenste bladeren verwijderd en grof gehakt
1 el venkelzaad, gestampt
Flinke scheut balsamico azijn
Extra vierge olijfolie
Zeezout en verse zwarte peper
Handje bladpeterselie (blaadjes gescheurd) als garnering
Bereiding
Stamp de venkelzaadjes in een vijzel. Fruit de ui een paar minuten aan in een gietijzeren pan met olijfolie en de venkelzaadjes. Voeg de appel blokjes, kool, zout en peper toe. Laat op een laag pitje 20 minuten sudderen. Voeg de balsamico azijn toe, roer af en toe totdat het een stroperig, zoet geheel wordt – ongeveer een uur in totaal.

Ingrediënten
Voor 4 personen
1 kg zoete aardappels, geschild en in blokjes gesneden
1 el Vadouvan kruiden (milde Indiase kerriekruidenmix met Franse invloeden bv van Euroma – Jonnie Boer)
Extra vierge olijfolie
Zeezout en verse zwarte peper
Bereiding
Kook de zoete aardappelblokjes in water met zout in 15 minuten gaar. Giet ze af en pureer ze en breng op smaak met de kruidenmix, scheutje olijfolie en zout en peper.
Confit de canard
Het blik van de canards warm je op au bain marie zodat je de eend eruit kan halen. Vervolgens leg je ze in de oven met de huid naar boven voor 10 minuten op 180 graden om op te warmen, je eindigt op grillstand om het velletje lekker krokant te maken.
